
Shizuoka Sencha
Honyama is a high, river-fog valley north of Shizuoka city — slow morning shade, narrow rows, hand-rolled tea. The cup is bright spring-green, with a delicate marine sweetness and a clean astringent finish that lingers like wet stone.
A single-cultivar sencha is the easiest way to learn what yabukita tastes like — bright, then savoury, then quietly long.
