The Chiran fields face the Pacific — sea wind, volcanic ash and an early spring. Deep-steaming for 90 seconds breaks the leaf open: the liquor is cloudy jade, with a thick mouthfeel, savoury seaweed up front, and a long, salt-air finish.

From the Sakamoto family fields above Chiran, harvested on the morning of 16 April 2026, two weeks earlier than the Kyoto lots. Deep-steamed at the village cooperative the same afternoon and packed in Kyoto a week later.
