Umami broth, sweet seaweed and a long mineral finish. The shade-grown leaves develop high theanine — the cup pours a pale jade, almost translucent, with a viscosity closer to soup than tea.

Served at 60°C, the second steep is brighter, the third is grassy — five steeps from a single tin is not unusual.

Yame is the gyokuro capital of Japan — fields covered in reed and straw for twenty days before harvest. This lot was picked on the morning of 22 April 2026 by the Hidaka family, second-generation growers, and packed in Kyoto the following Tuesday.
